Rinse the chicken wings under cold water. Next, pour 2 liters of hot water (about 70°C) into a basin and dissolve 2 tablespoons of salt in it. Soak the wings in the hot salted water for about 5 minutes, then use a knife to scrape off any dirt, grease, or residue on the skin. Rinse again with clean water and drain.

Tips for cleaning wings and removing odor:

  • After rubbing with salt, use a mixture of rice wine and sliced, crushed ginger to rub and massage the wings again to fully eliminate odor and impurities.
  • Rinse clean and let drain. Alternatively, add lemon to water, soak the wings for 15–20 minutes, then remove, rinse with cold water, and drain

2. Marinate the chicken wings

3. Grill the chicken wings

Method 1: Using an oven

  • Preheat the oven for 10 minutes at 210°C to stabilize the temperature.
  • Arrange the wings on a tray and bake at 200°C for 20 minutes.
  • Take the leftover marinade, mix in 1 tablespoon of honey.
  • After 20 minutes, open the oven, brush half of this mixture evenly over the wings, then continue baking for another 5 minutes.
  • After 10 minutes, open the oven, flip the wings, brush the remaining marinade over them, close the door, switch to top heat, and bake for another 5 minutes to finish.

Method 2: Using an air fryer

  • Place the wings on the rack, put into the air fryer, and cook at 180°C for about 5 minutes.
  • After 5 minutes, remove the tray, brush marinade over the top, then continue air-frying for another 5 minutes at 180°C.
  • Remove the wings; you can brush marinade again and air-fry for another 5 minutes.
  • Since the air fryer is sealed and you can’t monitor the process, check every 5 minutes and repeat to prevent burning. Adjust time and temperature in later rounds based on doneness.
