Nguyên liệu

Main Ingredients

  • 350g silken tofu, cut into bite-sized cubes

  • 2 salted duck egg yolks, steamed and mashed

  • 1 chicken egg, beaten

  • 4 stalks green onion, finely chopped

Coating & Frying

  • 200g panko breadcrumbs

  • 110ml vegetable oil (for frying)

How to Choose Good Pork Floss (Chà Bông)

  • Choose pork floss that is light yellow in color, which comes naturally from cooked meat. Avoid floss that is dark yellow, as it may contain artificial coloring or chemicals.
  • Authentic pork floss should have a fluffy, cotton-like texture, with fine strands that don’t stick together. It shouldn’t be too chewy or too soft, and should gradually melt in the mouth.
  • In contrast, fake floss made from cassava residue becomes increasingly chewy the more you chew, with thick strands that clump together and lack the desired fluffiness.
  • For health and safety reasons, you can also make your own pork floss at home.

How to Choose Good Salted Egg Yolks

  • Buy salted egg yolks from trusted stores or supermarkets to ensure food safety and hygiene.
  • Check the expiration date and manufacture date on the packaging. Ideally, buy those with the most recent production date for the best taste and freshness.
  • Avoid yolks that are leaking, cracked, have black spots, damaged packaging, or broken seals.

In Vietnamese kitchens, tofu—especially soft tofu—is often associated with gentle, homey meals: steamed, braised, or served with soy sauce in family dinners. Its mild flavor and silky texture reflect the simplicity and balance that define much of Vietnamese cooking. However, in recent years, a more playful and indulgent version has captured the hearts of many: salted egg yolk crispy tofu.

Influenced by Chinese culinary traditions, salted egg yolk brings a rich, savory depth to the dish, turning the humble tofu into something luxurious. The contrast between the crispy, golden crust and the pillowy soft center creates a delightful bite. Tossed in creamy salted egg yolk sauce, then topped with pork floss and scallion oil, the dish becomes a celebration of textures and flavors—creamy, salty, crispy, and aromatic all at once.

Once just a street snack or a creative twist in trendy eateries, this dish has now made its way to Vietnamese homes as a beloved comfort food for kids and adults alike. It represents the evolving nature of Vietnamese cuisine: honoring tradition while embracing innovation. Today, this dish has also found its place on modern drinking tables. With its crispy shell and bold umami notes from salted egg yolk and pork floss, it makes a great companion to a cold beer—perfect for casual gatherings or laid-back dinners.
